Flour consists of different carbohydrates, fatty acids, crude fibers, proteins and many more ingredients which make different varieties of flour. We never forget that flour is a living powder changing its qualities during each step of our production process. We handle the product with highest care to deliver you the goods you require.
Whatever you need we should be able to produce it as long it is made out of milling wheat. The flour we produce is mainly divided into three groups:
High protein flour; medium protein flour; low protein flour
If it is high-, medium or low protein flour it doesn't say anything about how good the flour is. It tells you more or less in which of your products you need to use it.
Bread Flour is for example high-protein flour which is ideal for making all varieties of bread, buns and other flour-based products.
Medium protein flour sometimes also called ‘all-purpose' flour is,as its name suggests, suitable for alltypes of products. It is weak enough to stop toughening but strong enough to stand the pressures of the gases resulting from the use of baking powders etc.
Low medium flour or also called weak with a low gluten content of approx. 8% is therefore ideal for delicate cake and sponge production.
